Tante Restante’s mission is to minimise food waste by converting food waste into new products. One of the products they have developed is ice cream made from Oranjekoek, a typical Frisian delicacy with candied orange peel. Unfortunately, pieces of this cake still end up in the trash.
During the TT Festival, Koen from Tante Restante presented this special ice cream to the public, to test whether there would be a market for ice cream made from food residue. Attention was paid to the taste, thoughts on the use of waste flows and the willingness of consumers to pay for this sustainable product. The test was carried out by 250 people, with the following results:
- 90% of the test subjects found the ice cream delicious;
- 80% of the participants indicated that they were willing to buy waste product ice cream;
- 90% value a sustainable planet and were positive about the concept;
- 95% thought it was good that there is ice cream made from waste products on the market;
- The average price willingness was €2 per scoop.
In addition to these figures, valuable insights were also gained for the marketing and packaging. Based on the positive feedback and market analysis, Koen is now looking for investors to expand the production capacity. The goal is to produce and distribute Tante Restante ice cream on a larger scale, so that more consumers can enjoy this unique and sustainable product.
