At Bevrijdingsfestival Overijssel, visitors were introduced to the food innovation of the future: water lentils. Lemna, a sustainable food startup, presented water lentils as an environmentally friendly and nutritious food option. Water lentils have a very efficient protein production per hectare compared to soy or peas, for example. At Lemna’s production station, festival-goers were able to harvest water lentils themselves.

Lemna’s presence at the festival offered visitors a chance to discover the benefits of water lentils. It raised awareness about the sustainability and nutritional value and with the visitors’ feedback, Lemna can work to improve the production process. Of course, they hope that water lentils will be a promising food source for the future!
